Soft Peanut Butter Cookies



I thought I’d start things off with something simple, like peanut butter cookies! I’m a big fan of peanut butter, so these soft, bite-sized cookies are the perfect treat. This recipe is pretty traditional, but the addition of nutmeg gives them a little kick.


Baking Notes!

  • Be sure to break up the brown sugar properly; otherwise, you’ll get chunks of straight brown sugar after baking.
  • I recommend using an electric mixer rather than a spoon or whisk, especially after adding the peanut butter.
  • You can roll the dough into balls by hand, but I used a cookie baller to get them all the perfect size.

Soft Peanut Butter Cookies

  • 1/2 cup margarine
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 3/4 cup peanut butter
  • 2 teaspoons vanilla
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1 teaspoon nutmeg
  • 1 1/2 cups flour


  1. Preheat oven to 350.
  2. In a large bowl, combine the margarine, sugars, and egg until well mixed.
  3. Add in the peanut butter, vanilla, baking soda, salt, and nutmeg.
  4. Slowly mix in the flour, then chill dough in the refrigerator for 10-15 minutes.
  5. Place walnut-sized balls of dough on a cookie sheet, about an inch apart.
  6. Using a fork, lightly press down on each dough ball to create a criss-cross pattern.
  7. Bake on the middle-rack for 9 minutes.
