Cake Cookie Ice Cream Sandwiches


My friend, Julia, and I found this recipe from One Good Thing and decided to give it a try. We used Pillsbury Moist Supreme: Devil’s Food Cake and Strawberry cake mixes, but the strawberry ones didn’t come out nearly as good as the chocolate ones. The recipe we were adapting from called for a full stick of butter, but that seemed like a bit too much, so we cut that in half and decided to add a little bit of water in its place. We shared these cake cookies with some friends, and they tasted so good that we kind of forgot to make them into ice cream sandwiches for a while!


Baking Notes!

  • You could obviously use any kind of cake mix or even make your own batter from scratch. The same goes for the ice cream!
  • We originally tried using store-bought cream cheese frosting instead of ice cream, but that didn’t work out well. If you do want to use frosting, try a simple vanilla flavor.

Cake Cookie Ice Cream Sandwiches

Prep Time: 15 minutes | Bake Time: 10 minutes

# of Servings: about 2 dozen


  • 1 box cake mix
  • 4 tablespoons melted butter
  • 2 eggs
  • 1 tablespoon water
  • 1 tub of vanilla ice cream


  1. Preheat oven to 350.
  2. Melt the butter in the microwave.
  3. Combine the box cake mix, butter, and eggs in a large bowl. Mix well.
  4. Stir in the water, adding as needed until batter comes together nicely.
  5. Place walnut-sized balls of dough on a cookie sheet, about an inch apart.
  6. Using your fingers or a spoon, lightly flatten each dough ball.
  7. Bake on the middle-rack for 10 minutes, then allow cookies to cool completely.
  8. Take two cookies and add a scoop of ice cream between them.
